Went to the meat market today to buy a pork butt/shoulder to smoke for pulled pork on Sunday. Was surprised at the size of the thing. It's 11 lbs! At 1-1/2 hours per pound it'll take about 16 hours to cook it in the smoker. Does this sound right?
 
I second jar jars sentiment! 300 degrees makes some sweet pulled pork with really crispy bark. If you like softer bark foil it around 165 and that will really cook fast! At 300 with no foiling I get about an hour a pound with incredibly crispy delicious bark.
