Pork shoulder question...

  1. Bored and browsing the forums and figured I'd ask since its happened multiple times. When I do my butts my target meat temp is 200 - 205.... I prefer to not foil my butts because I really love the heavy bark, but every time I've tried to not foil (only a couple times), it takes 8 hours to go from 169 deg to 192.... It stays at 192 for hours.... Both times I've pulled uncoiled butts at 19-20 hrs and the meat temp never rises above 192.... If I foil at ~165 I can finish in about 10 hrs with a meat temp of 202 -205 deg... The product is still great, just curious if you all have any insight...
  2. I don't foil till i pull it to rest. Patients it will never get to 200-205 if you pull it at 192.

    I used to foil....and don't any more.  Just foil when I put them in for a "cooler nap".

    What temp is your smoker at?  I cook around 225-250 and yes it takes maybe 17 hours when I pull mine off at 195 and then I foil and wrap in towels for a rest in a cooler.
  5. Guess I forgot to mention that.... My cooking temp is usually 225-250.... Got a WSM and she holds the temp pretty good.... I don't open except to add wood through access door. I guess, really I was just wondering I'd the time difference between foiling and not foiling was that large. I mean foiled it takes 10-11 hours.... Not foiled takes 20+ hours.... Hmm?
