If you want to add more smoke to sometimes "smokeless flavor" pork shanks.... I recommend Pitmasters Choice Pellets from Todd.. and coupled with the Amazing Pellet Smoker, you have the recipe for success....

You might think, the shanks (or hocks) being already smoked, are good to go.... I do not find them smokey enough to add great flavor to too many dishes.... 

Pitmasters Choice Pellets are mild and almost sweet.... The smoke flavor and aroma are not overpowering and add a complimentary flavor profile anyone will appreciate.... these shanks were smoked for an additional 4 hours after purchase.... I wish you could smell the goodness.....

I smoked them at 180 for 5 hours with 4 hours of smoke..... They had nitrite in the list of ingredients so final temp was 145, they will be cooked additionally when added to a dish for more flavor....  The went into the fridge for 6 hours, as is, to cool... vac packed for future use....   At $1.79 compared to $3.29 last fall, I felt lucky....

Them are some meaty looking shanks!

How about using them in some bean soup or split pea soup?

Seasonings.... Salt, pepper, home grown dried and crushed garlic, bay leaf, chicken stock, crushed red pepper,

onion and carrots....

Saute the veggies in bacon fat (or schmaltz, in this case, keeping with the chick broth theme)....

Adding the seasonings to taste....  bride never, ever measures anything....

After a few hours of simmering.....  the shanks fall apart and the flavors meld.....  We leave the bones in for the 

duration, for more flavor...

Cornbread muffins are a must with beans and shanks around here.....

The smoke, on the shanks, is a compliment to the dish... Subtle and wonderful is the only way to describe it.....  

Pitmaster's Choice Pellets are never overpowering  in any dish I have tried....  My compliments to the creator for this magnificent blend.....
