Good morning, Happy Thanksgiving. Going to make a rack of ribs within the next few days, and wondering if I should sauce them, or just rub them? This will only be my second smoke ever, so any tips would be appreciated.
Simple rub works well. If you want to put a base on the ribs first to help the rub stick you can use a thin coat of yellow mustard or olive oil. Easy on the smoke as pork ribs take it in easily and until you find how much you like. The ol' 3 2 1 cook method is a good basic start point.
I have stick burning smoker so I just use firewood or I'll never get it over 200 lol. One thing I just noticed through reading though, was I was using the bark still on the wood. Read that's a no no. Flavor was waaaay overwhelming.
How long until you pull them do you put your finishing sauce on?
Final sauce and / or glaze in the last 10 to 15 minutes so you don't burn sugars in the sauces. Nothing wrong with putting warm sauces on the side for those that want them. Thats what I do. I'm a great believer in lettingcthe meat be the star.
