Smoked a 8 lb picnic 275 for 9 hours to 203. Put it in cooler for 4 hours. :drool
This is the first one I have done hot n fast. We also removed most of fat cap and the skin. We used amnps to smoke 4 hours, but also used a little charcoal,hickory, and apple. We used chips and chunks for the first couple hours. Smoked the skin also.
