Those loin hams in the beginning turned out excellent. No fat or anything tough to chew on in a sandwich.I want to try ham but want them for slicing.
I would try it at least once. The flavor is really good with the fat mingling in the meat but fat always does that...lolThere are pork shoulders on sale right now. I may have to give this a go. Thanks for posting.

Looks Great Todd !!!I lowered the smoker temp on the butts to 215 for the last 5 of a 17 hours smoke in an effort to breakdown as much fat as possible. The results are fantastic! A few more pictures.
Most of the fat broke down except for 2 ball shaped pieces in each butt.

I never did the whole butt into Pulled Butt Ham. I always do the top with the fat cap into BBB, and the bottom half into Butt Ham.
I'm wondering if some of the fat that was left was the fat that surrounds that nasty little gland??
