Cooked up some pork chops with pineapple in the DO tonight. Paired that with some tomato pie.....

The Tomato Pie... fresh tomatos out of the garden.

The pork chops after an hour....

My plate - it doesn't look really pretty, but it was tasty!

Ah, Pork Chops, The T-Bone of the Pig... Delicious any way its cooked in my opinion...

Looks good to me Elly! I still got to try making your tomato pie sometime.

That plate looks great to me! Excellent looking meal and tomato pie? I wasn't quite sure what that was until I saw the pics and hot dawg does that look good! Especially with fresh maters from the garden, do you have a recipe for that posted anywhere?

Happy to share - It's one of our summer favorites.

Precook 1 pie crust and let it cool.
Slice or dice up enough tomatos to fill the crust. Let them drain well.
Cut up some basil (fresh is best) Mix it in with the tomatos
Mix
1 cup of Mayo
1 cup of your favorite shreaded cheese (I use a mix of chedder and jack)
Spread the mayo/cheese mixture over the tomatos.
Cook in a 350 degree oven for 20 - 30 minutes until the cheese mix is bubbly.
Enjoy!

Dang ellymae that tomato pie looks good. I got fresh maters in the garden and will have to give it a try.
