I started smoking the pork butts for work this morning around 11:30. Here are some pics to get you started.

4 butts totaling ~34lbs

I'm going to get the poblanos and chubs ready to go...not sure if I'll have enough room for the chuckie or not. We'll see.
 
You are off to a great start and you are very right thats a full smoker. I hope your the boss at work because if your not he's in some real trouble. With food like that they will all vote you boss for sure. One question thou is the foil fpr any reason then cleaner smoker or what?
 
I just foiled it up today to make cleanup easier. It also makes handling the food easier for me in such a small smoker.
 
I had the same question...does the foil not hinder the airflow (heat and smoke?) I have a vertical smoker and the documentation said !!!DO NOT FOIL RACKS!!! for this reason.
 
I've never had an issue with foiling them. I can see their point, but I've never had an issue.
 
My Bradley also says not to foil the racks as it interferes with heat circulation...
 
Well now y'all got me paranoid. So I took the foil off though I saw now temp variations.

Hopefully it'll go well.
 
good lookin start there, cant wait to see the finished product.
 
I got too involved in the Colts game last night...got finished smoking at 2AM and had to be up for work at 4.

Unfortunately I have no proof but an empty tin pan of pulled pork and a half empty crock pot of beans.
 
That is just ridiculous...I say a BAN for life on that one....lol...I'm sure everything came out awesome. sure can't know for a fact tho with out any pics
