pork butts for coworkers

    Gonna be smoking two pork butts tomorrow for some coworkers to enjoy Monday noon.

    Purchased them Thursday and immediately got them in an aluminum pan covered in heavy garlic and salt for twenty four hours then Friday I put them in an apple cider and juice brine. And today I drained all the liquid rubbed them with a little olive oil then my dry rub and back in the fridge till morning.

    Thanks.. I'm looking forward to the whole smoke experience..

    I will be posting pictures on here through out the cook tomorrow..

    What time are you starting? I just put 2 on about an hour ago there going all night while I get to sleep!

    I'm thinking about 6ish.. I'm figuring they will both be done in about 12 -14 hours

    Got up a little late this morning but that's ok. Got the butts on about 9. Got the smoker up to 250 and using beech and apple woods.

    Here's a couple hours into the cook.. putting my own mop on both of them.

    Not sure if yall can see it but the beech and apple wood mixture puts out a nice TBS
