been awhile since i have been on. weathers getting warm so let the smoking begin. Question? Im doing a pork butt tomorrow for my son back from the Marines. can I but the mustard and rub on the night before or just do it in the morning. Thanks everyone
 
I like to do the rub and mustard a day ahead if I have the time.  In the fridge until your ready to smoke, then do your usual smoke procedure.  Mustard is more than a marinade, it actually has properties that  will break down the meat, tenderize, and accentuate the flavors.  just my 2 cents.  Good luck and thank your son for his service.

If I am not brining I prefer to put the mustard and the rub on the night before. I think this helps to form a better bark and also help some of the seasonings to penetrate into the meat. IMHO

thanks all Its on the smoker now and its 5 in the morning and its 31 degrees out. Is it to early to drink beer

Now you apply the mustard the night before or the day of either or is alright. Now you need to spend time with your son and enjoy the time you have. Now then you enjoy your smoke and thank you son us.
