So i built a little box charcoal smoker. i've tested it for the last 3 days held temps around 240 steady.

now i've got my first pork butt in, its been in for 1 hour 45 mintues and has gone from 42* too 130*. Temp on my digital themo is reading 240* . This seems a little fast for the temp to be raising does it not?

not always. I have had them rise fast at first but then they hit a stall. I normally do mine at 225 and they get above 140 in 3 hours or so. Also are you sure that your meat probe is in the middle of the biggest part and not to far thru to the other side? Also how big is the butt?

the butt is about 7 pounds, and the thermo is in the thickest part (thickest part without the bone interferring). i think its more of me just worry because its a new toy and i don't want to ruin the meat. I will keep things updated through the day and later take some pictures and see if i can post them.

Sounds like a good plan. Remember that butt's are very forgiving.

Well it calmed down, im 5 1/2 hours in and hit the stall at 162* deciding wether to wrap it or just run it right through unwrapped.

The main thing,,,,r u having fun...?? I am to new to offer advise. I am learning and the one thing that seems to be a consistant statement around hear is it is done when it's done....and prolly an hour after you think it is done...keep pluggin away...
