Just finished my replacement UDS the other day and got it seasoned. Wanted to cook something this weekend but don't want to do pork butts for pulled pork but wanted some pork.  I bought a smaller pork butt and cut it up into smaller strips/pieces etc and trimmed it up with-in reason.  Will give it a good rub tomorrow a few minutes before tossing on the smoker and then later on when it's close to being done, I'll slop it up with some of my homemade q-sauce and let that caramelize slightly.  I think it may take the better part of the day, but not the usual 14 -17 hours when I do whole butts.
 
Depending on your temp of the smoker it probably will only take a few hours. Pork chops, pork loins, etc only take. Few hours to get done. Your smaller chunks will be the same.
 
I'll probably cook these pieces a bit higher temp than I normally cook a whole pork but.  I'm thinking about 250 - 275 and later on let it get just under 300 to caramelize the sauce.  That's unusually what I do with baby back ribs.
