I am doing a 5lb pork butt today. The plan is to go with a 240 degree smoke and have it ready for dinner. I put it on at 8:15 am and am using half hickory and half apple.

We got a decent rain last night and my smoker cover leaks like crazy. I went with a 3rd party cover and not the Cookshack brand so maybe I should try for an exchange.
 
Here are some shots of the final product. I started to run out of time so I foiled and finished in the oven for the last 15 degrees. I smoked 8.5 hours at 240 and it only hit 180.

It was excellent tasting.

Throwing some slaw on the sandwich did cross my mind. I tend to prefer mayo slaw on a sandwich, but your idea with the hot sauce is something I will have to try.
