My wife is chairing the Stanford Womens Auxilliary charity event for the Lucille Packard Childrens Hospital. She hosts the meeting at our house. Twenty ladies. We are responsible for the lunch, so I promised pulled pork sliders and beans and coleslaw. I did the butts and the beans today. This should be interesting, not sure what this crowd will do with pulled pork, but I'm betting I might convert a few into BBQ fanatics.
I injected these guys last night with Peach Juice, Salt, Sugar and Worcestershire. Rubbed them down with ballpark mustard and hit them each with a healthy dose of Yardbird. Oak, Apple and Hickory for smoke.
Did two, a 6 and a 7 pounder. I love it when the bone pops like a turkey thermometer.
Ran at 250 for about 6 hours. Foiled when the bark looked set. Pulled and will sauce later with Blues Hog cut with peach juice and some Kinders (a local establishment, sauce isn't bad). Fantastic smoke, and an easy pull. Lookout Ladies!
