Pork butt came out awesome!

  1. Outside of the dog chewing up (last smoke) one of my Thermoworks probes, and only leaving me with a grate reading probe, this was a good smoke. I did have some other crappy meat thermometer that seemed to work half way decent based on results. Pulled her at 195 and a little over 8 hours -- very tender, juicy and awesome. Thanks for all of the advice here.
