Well, trying two new meats on the pbc. Have cooked them both many many times but never on the new toy!
So started by rubbing the butt with some mustard and then some Memphis Dust...
It was about 4.5 pounds or so. Hooked it up which was difficult. It was deboned so I probably should have tied it...
Lit the PBC with the chimney starter method and added a couple of chunks of hickory and Apple to the coals and let it hang at around 4:45...
The butt was going to be for a future meal. So at around 5:45, I rubbed the tri tip with some of the PBC Beef and Game seasoning.
Let it hang at around 6:
It was around 2.5 pounds and about an hour later it was done...
I pulled it at 125 IT... didn't carry over as much as it usually does when I cook it on the weber kettle. But I am usually running hotter so it makes sense. Besides I like it medium rare closer to rare so this was perfect...
Served it over black beans and rice with some guacamole and smoked jalapeno havarti. Didn't get a chance to take a pic of that since my daughter was reeking havoc haha.
At that point I decided to throw the butt on the grate so if I got busy it wouldn't end up on the coals..
