I do have a question and I'm sorry if you already said it and I missed it but once you cut them up and put it back in the smoker how long or what temp do you cook them to
I put them back in the smoker for two hours. I didn't worry about internal temperature, I was going for a nice exterior.

Yeah. Think I will just use them for Canadian bacon and leave burnt ends to pork butts.
Sirloin also makes a nice loin ham. Just saying.

I have 8 of them, all in the ~1.5 pound range. 4 hams and 4 CBs it is. Now I just have to get to the weekend so I can get started.

Just might. My wife is finding out that her plan for the second fridge in the pantry and my plan for it are vastly different.
 
 
Looking good, Disco.  I haven't tried pork burnt ends, but after seeing this, I'm definitely going to do up a batch--just happen to have a butt in the freezer.  Now all I have to do is get home long enough to fire up the MES.
