Porchetta from the smoker with Q-View!

  1. I have been wanting to do this for a long time - but this week the stars aligned and pork loin was on sale, hubby bought some incredible belly, and the herb garden was WOW 

    Porchetta isn't usually smoked, but because we live in a motor home with limited AC power & in an area where the temps are 98+ this week, we did the bulk of the cooking in the smoker with only the residual "smoke" from the walls of the smoker.  

    I also put a rack of oregano and sage in the smoker, and a pan of ketchup using a mix of chips.
