Pop's Brine Belly Bacon and BBB

    Third batch of belly bacon and first batch of BBB made with Pop's brine.  Turned out quite well I think.  I just got a Chef Choice 615 slicer and was quite impressed with how well it worked.  How do ya'll prep the butt for BBB?  This batch turned out well, but I think I need to do better prep work on the butt before it goes into the brine.  Next time I'll make sure and take more pictures.

    When I did my BBB I just carefully de-boned the butt and cut into two slabs about the same thickness and brined in Pops brine. I smoked using bacon hooks, sliced across the grain and enjoyed!

    Check out some of Chef Rob's threads.... He has BBB down to a science....

    Thanks Gene, I kinda butchered it since I don't have an actual boning knife. More things to get after I acquire a "real" smoker.
