I chopped up a pork butt for sausage and then decided to try this recipe for a fresh sausage,sorry no smoke.
.It has salt.pepper.garlic and marjoram in it
so its pretty close to smoked kielbasa w/o smoke or cure . Also added some finely ground venison to it instead of the beef called for by Marianski.
