Point to ponder... How much NFDM does it take to trigger allergy or intolerance?

 How much NFDM does it take to trigger a milk allergy or lactose intolerance?

I was thinking about this last night while I was mixing up some meats for snack sticks.  So, I hit the good old internet, couldn't find squat about it...

Thus far, I haven't had any problems with people eating my wares, but it could happen... I think...

Any of the meat safety gurus have any ideas?
 
Good question, never thought about this as I'm not allergic to anything, interested in findings. Don't use it much, only when fat ratio is off. Have a friend who's allergic to lemons, & 2 kids who are pretty much allergic to life. Everything other then food seems to bother/effect them. Will be good knowledge have.

I should be able to do some math now and see what's potentially too large if a serving for the poor souls that can't do milk or milk products!

Thanks to CrazyMoon for finding the link above.  According to it, and some other places I visited, <2% lactose in a product should be ok for folks that have lactose intolerance.

So, I did a little math and came up with the following:

Per the table provided by CrazyMoon, NFDM is ~53% lactose, which would put the total lactose for this batch at 31.8 grams total.

With a whole batch total of 3799.3g, that puts me at 0.00837g of lactose per gram of product.

Now, if we calculate each serving size at 113g (.25#), that gives us 0.95g per serving, or 0.84% lactose per serving.

Wouldn’t hurt for someone to double/triple check my math, but I think I’m ok with this one. 

However, if one were to follow the 1 cup (68g) NFDM to 5# (2268g) meat, we would be exceeding the threshold.

Later today I’ll see about putting together a cheatsheet…  I love doing this type of thing, but SWMBO wants to go eat Mexican food...
