I have a few small race tracks near me. Love the old dirt track racing. 3 wheels or nothing....
I chose 218r because in MN, it can be commen term to be a twooneeighter....

I haven't read the whole thread but one recommendation I would make is to make sure you have LONG sleeves on with gloves on AND be strong enough to hold a heavy turkey out from your body and lower slowly. This may take up to 2 full minutes to fully lower the turkey safely. It's best to have two people to hold and lower the turkey together for this reason :)
 
I cover mine completely with Mustard and inject Tony’s butter&Jalapeno in it and set over night in the icebox then cook it the next following day

The mustard itself is the seasoning and rub.I actually learned this from Phil Robertson on Duck Dynasty and I’ve been doing it for about 3yrs now and my family and friends really love it

Interesting. So just plain yellow mustard. Do you brine the turkey too or just inject.

Did not read entire thread, maybe already said..

Get a 6' + 2x2, suspend turkey at CL, and TWO guys lower into oil w burner turned OFF.

This method allows to totally stay totally away from area above pot till it settles down.

Steam can burn your arms like Hell.

I didn't see it posted and hope that it goes without saying but... pots full of 375 degree oil and rain drops do not mix.
 
Lots of good ideas already posted and dry chem extinguisher is definitely tops the heap (Dad retired FD). One thing I would also encourage would be to halve the turkey and do 2 batches. Much less oil and easier (and safer) to handle.
