and Parmesan...developed this rather strange interest in Pizza all of a sudden. Bought a couple of books. Been doing some reading...having fun experimenting.
Went cheese shopping yesterday....want to make sure we have enough smoked pepper/colby/Monterey Jack for the summer.
Ran out of Smoked mozzarella, wife grabbed a loaf of low moisture mozzarella and a block of Romano & Parmesan.
In my very limited experience with smoking cheese have noticed a pronounced drying effect. Last mozzarella we smoked the Egg had some minor dripping. Will cold smoking cheese such as Romano & Parmesan make them crumbly?
