Hi everyone, first time poster, but I've been lurking this forum for a long time. This has been an invaluable resource for me in getting started with serious bbqing/smoking. I'm still very much an amateur, so I want to continue honing my craft before investing in serious hardware, but I'm starting to run into some equipment limitations so I wanted to "modify" my little brinkmann electric vertical water smoker.
The last time I smoked using my electric brinkmann I placed a large double-wall cardboard box around the entire unit and saw some of the most consistent temps ever from that unit. It basically held 225-235 for as long as I left it undisturbed. However, I'm not terribly comfortable with the idea of leaving a flammable cardboard box over the smoker for long periods unattended. I've seen people make smokers out of ceramic flower pots, so I thought to myself, wouldn't the flower pots make a great insulated container for the smoker?
Has anyone tried putting their entire vertical water smoker in two ceramic flower pots to aid heat retention? Since the brinkmann lid leaks so badly, I'm going try to run the smoker sealed inside the two flower pots with no lid and a gap between the heating pan and the smoker body, so long as I can get the electric element to generate enough heat. I'll be running it with an Auber dual probe PID so I'm not worried about temperature spikes if the ceramic pots do too good a job holding heat.
Does anyone have any input on why this will or won't produce good results?
