Pine smoke house t&g

Just joined and this is my first post of many i hope. Also sending a big hello over from the emerald isle. I live on the west coast of ireland and im a keen fisherman, mostly for atlantic salmon. Ive yet to smoke my own salmon but after tasting a piece of smoked salmon a friend gave me at the wknd, im kean to start smoking my own because it was delious to say the least.

Ill be building a small 2x2ftsq x 3.3ft high with T&G 22mm pine. Ill be using 6x1 t&g and im wondering would i need to glue the joint to stop any potential leaks or just nail in ase the glue could be toxic.

Can i varnish the exterior or could the varnish leech through to the interior and potentialy get into the salmon when smoking.

Ill be buying an 800watt eletric hotplate but im wondering how would i regulate the temp inside the smoker. Ive seen thermostates that measures the temp but wondering how it can be controled. Isnt it 200 degrees i smoke the salmon or maybe less i dont know.

Ill be buying the timber in monday and hopefully make this smoker during the week. Is there any paticular nails i should order for the smoker. What about smoke leaks because if my woodwork skills arent that great, would a small leak here and there cause problems.

What size chimney should i use and can it be made in timber.

reword your search...Smoker builds..or..  Wood smokehouse builds....I just went to Smoker builds you can scroll down and find wood builds that you can get alot of info from.

Howdy. When you say pine are you buying it from a lumber yard or somewhere like home depot? I ask because the stuff at home depot is whitewood and from what I gather is a mix of soft woods. I used T&G 1x6 whitewood and used deck sealant on the outside. You don't want your smokehouse to be air tight but you want whatever leaks you do have to be consistent so you can regulate your temp easier. The nails aren't that important but anything that is exposed to the cook chamber (CC) you can just spray paint with some oven paint. The most important part is gonna be to season your SH after you are done. I cold smoked mine using the ever so popular AMNPS and some mesquite saw dust. As far as the t&g it will be tight enough to repel water just put several light coats of sealant. Any more questions feel free to ask!
 
If you are going to use an electric heating element, you can get a thermostat that controls the electricity to the heating element for pretty cheap - 15-20 bucks.  Probably cheaper, the one I have is digital and cost me $15.  Set it with a hi and low limit, then it uses a relay to pass electricity to the element or block it so you can control the temps.
