Pickled Eggs

    I saw a recipe on here for Cajun Pickled Eggs (Thanks nepas!) and thought these would be great to take hunting with me this weekend (opening day of Bow season)

    So I followed this with a couple of modifications:

    1 doz. hard boiled eggs
    1 1/2 teaspoon salt
    2 whole cayenne peppers (I added two Jalepenos as well)
    2 teaspoons sugar
    2 tablespoons whole peppercorns
    1/2 cup of water
    2 bay leaves
    2 1/2 cups vinegar
    2 tablespoons Tony Chacheres or your fav.
    1/4 teaspoon garlic powder (I used Onion powder as I did not have Garlic)

    Shell your eggs and pack in jar. Mix all the ingredients (except eggs) and boil..Let brine cool then pour over eggs and seal jar..Refrigerate for at least 2 weeks.

    I also only have a week so I vacuum sealed them in a jar. Hopefully this will speed them along.

    Cannot wait to try these!

    Forgot to post the results of my pickled eggs.

    These came out great! I have another batch going right now. I had 13 in the jar and only 4 came home and there were only two of us eating them.

    Al, I think the vacuum helped because they had great flavor and a nice color to them and only sat for 1 week.

    Did the peppers give it any spice I tried it a different way and didn't get much heat.

    I found the taste to be really good but you are correct there was not much heat.

    Oh man, I never even thought about vac'ing

    these kinds of things.

  11. I got a set of vacuum jars with my first sealer and have never used them I think you may have changed that.

    That is exactly what that jar is. Got a set of them with my first (I am on my third) sealer and they have sat in the basement ever since. This is the first time it was used.

    I think it worked well.
  13. I'm thinking of using them to marinate meats for Stirfry, taco meat and such. I have never eaten a pickled egg but it sounds like something I would like. Thanks for the idea,

    Mine has a marinater (new word)  according to the computer.

    But it also has a Mason jar suction cover too.

    I have never used either one, but I will give them a go.

    I had to join in....   Went and checked the chicken coop...  no eggs for 4 days now...   finally found a new nest with 8 eggss...  did the float test to see if they were old...  Nope...  all the eggs sunk to the bottom of the cold water filled bowl....   so...   not being perfectly sure, I figured pickling was the way to go...   

    made the pickling brine.. 2C  white vinegar, 1/2C water, 2C sugar, 2Tbs. pickling spice, 2tsp. allspice and pickled jalapeno slices....  

    Vacuum the jar / release / vacuum / release etc. to suck the brine into the eggs as much as possible...  applied the canning lid and sucked again... placed the ring on the jar and into the refer inverted for an hour or two....  turned the jar and wait... and wait.....   a few days and they should be good...   didn't have any onions to slice up to add...  darn...  pickled onions are the best...

    Well.......  They've been in the brine 5 hours now and I've eaten 3...   Like candy they are...    Hell....  I'm going to go get another....

    they are good......   UMMMMMMM ...

    soft centers on the eggs..... I steam them for 8   10-11 minutes...  1200' altitude....

    edit the cooking time....
