I started smoking meat a couple of years ago after spending time in Texas and not finding what I wanted back here in PA. I started experimenting with a smoker box in my gas grill which turned out pretty decent food. Not exactly what I know some of you were turning out, but it was good enough to keep me interested.
I moved up to a Weber Summit with the built in smoker box and once again the results were good, but the Summit really isn't set up for efficient smoking. I also got a 30+ year old 26 inch Weber kettle that my uncle found in the garage of a house he bought and used that for some smoking. All of this was helping my experience and keeping me happily in smoked meats.
I just bought a Smokin-it #2 and have it's first load going at the moment. I am trying beef ribs as an experiment. Just checked them after 4 hours and they are looking good. I think they will need another 2 hours at least before they are done. I know I might be cheating in some peoples minds going with an electric smoker, but give my schedule, it is what makes sense for me at the moment.
