Philly guy in the suburbs

  1. Howdy folks!

    I started smoking meat a couple of years ago after spending time in Texas and not finding what I wanted back here in PA. I started experimenting with a smoker box in my gas grill which turned out pretty decent food. Not exactly what I know some of you were turning out, but it was good enough to keep me interested.

    I moved up to a Weber Summit with the built in smoker box and once again the results were good, but the Summit really isn't set up for efficient smoking. I also got a 30+ year old 26 inch Weber kettle that my uncle found in the garage of a house he bought and used that for some smoking. All of this was helping my experience and keeping me happily in smoked meats.

    I just bought a Smokin-it #2 and have it's first load going at the moment. I am trying beef ribs as an experiment. Just checked them after 4 hours and they are looking good. I think they will need another 2 hours at least before they are done. I know I might be cheating in some peoples minds going with an electric smoker, but give my schedule, it is what makes sense for me at the moment.

    I suggest you spend some time reading all the different forums and the WIKIs.

    Hi Ben,

    I recently purchased a Smokin-it #2 as well. You most likely dealt with Steve, he's a great guy, great customer service. You will love the electric in the winter. Much easier to control temps and you don't have to babysit it. I am in Indiana and it was 17 degrees this morning when I started smoking.  Be careful this forum is addictive! Good addiction though. 
  7. Ok, just finished dinner :)

    I did a rack of beef ribs as my first attempt. I haven't had great results with beef ribs in the past, but these came out great! They started out as the cheapo rib pack from the local supermarket and I doused them with some Rudy's Rub that I picked up on my last trip to Austin. I figured this would be as basic as it comes in preparing to smoke meat. They came out really, really good. They were too spicy for the family, but that just meant more for me. I had thought I did a good job removing the silver membrane but there seemed to be another tough membrane; still it wasn't anything bad.

    Set up and clean up of the smoker was simple. I will do a full review as soon as I get a moment.

    First off welcome to SMF there Ben. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.
