    Nice write up. I've been meaning to try this method for a few months now. I saw it in a fishing magazine I get and thought it was a brilliant idea. Thanks for the post.

    Tas - That's beautiful. Excellent write up and pics. I've done this a couple times in the past with red snapper with excellent results. Some of the most succelent fish I've ever had. Time to do it again. Thanks for sharing.

    thanks to everyone for the comments etc. the beauty of this method is that it costs almost nothing, yet it yields huge results in presentation and flavour! i'm guessing everything needed is probably already in the kitchen and pantry. a few eggs, some salt, and some fresh-caught fish ~ that's pretty much it, besides the herbs and seasoning, if you want any.
