I scored some PECAN wood today that was seasoned for 4 years and I can say that it smoked better than any wood so far. It burned very well and maintained a steady temp for a long period of time. I GOT A SLOOOOW LONG BURN WITH FAIRLY LARGE CHUNKS. ( apx 10 inch by 4 inch). AND did it smell good! I figured that wood being that seasoned (dry)would burn up hot and fast but NOT. The flavor is next to none even beating the cherry wood I used last week. It's 1 AM and my butt just hit 205 so after it rests for an hour or so I pull it and enjoy the rich flavor All week long..
