Pastromi with store corn beef

    Which is better point or flat, I just made some by using the flat and it was good but i read that the point has more fat and is better what's your experiance?

    Flats can be flakey and dry out easily. You make 2 at the same time one will be great the other not so much. Points on the other hand are made up of a muscle that contains a lot more marbling and collagen. They are more forgiving but the finished product will be somewhat fattier, freaks some people out...[​IMG]...Given the opportunity I go with points...JJ
