Here's my attempt at a pastrami project. Overall, I think it came out very well. It was also my first time using an AMNPS. It took a few adjustments on my part to keep the unit smoking, but when I finally got the smoke rolling steady, the amazing little contraption didn't stop until the end. I guess you can add another person to the overwhelming pile of positive recommendations for the AMNPS unit! As promised, here's the Q-View for my pastrami project: Two packs of corned beef brisket purchased at BJ's Wholesale Club. Just under 4.2 pounds at $3.49 per pound. These are shots of the back of the packages. Into the cold water and into the refrigerator they went for 24 hours to soak the salty taste out of them. During the 24 hour soaking period, I changed the water four times and turned them over each time I did so. This is a shot with the fat caps on top. Here, the corned beef briskets got a medium coat of coarsely ground cracked black peppercorns, coriander and garlic. Into the smoker they went with the fat cap on top. After wanting one for such a long time, I finally ordered and received an AMNPS. I decided to fill it with two rows of apple pellets for its debut smoke. Ironically, this smoke project started at 5:00pm and ended at just after 1:00am, so two rows of apple pellets was just right because the last pellets stopped smoking right before the briskets reached an internal temperature of 165 degrees. Beginner's luck, I guess. Here they are, ready to be wrapped and put into the refrigerator for a day before slicing. Here's a close-up of the seasonings. It smells so good!!! The next day, both briskets got sliced up thin. I know they tasted great because my wife kept eating pieces as I sliced and saying, "Mmmmm!". Pile-O-Pastrami After slicing, I lined everything up and broke out the vacuum sealer. My family's personal pile went into the refrigerator, so I didn't vacuum seal those.
