Pastrami pricing?

I passed out a few samples of my beef and Turkey Pastrami at work,
now I have several people that would like to purchase some
I was thinking in the neighborhood of 7.00lb ? sliced and packaged
I usually get the Packers for around 2.50-3.00lb
I know good deli meat which isnt even close to as good sells for 5-6 a pound. whats your opinions?? Ron? i know you have sold some stramies

I would be real careful about selling it unless you are licensed, it could come back and bite you in the you know where...

Someone is always looking for ways to make quick money and suing someone because they say they got sick off of something you made is at the top of the list...

Just my personal opinion...
 
I'm with these two guys. Just tell who ever to supply the meat and you will help them for a fee. Maybe you can make it for them and sell them a couch like they di when they scalp tickets to the football games. But really you could have a good law suit on your hands to way people and lawyers are theses days. Maybe if you know these people and don't think they would do anything sell them some it probally will be alright just I don't want to see anything happen to you.
 
I'm thinking that at $7.00/lb, you would probably just break even. I used to sell sausage to friends at work, they couldn't get enough of my Slim Jims and Summer Sausage. Made enough to pay for my equipment and for me to eat sausage for free.

7 dollars is too cheap. Our delis charge about 10 + for garbage. If you forgot, you will only get about 50% yield which means your finished cost is 5 - 6 dollars not counting anything else.

Also what others said about liability.
 
Just cure it properly enough and nobody should get sick, but if someone is trying to make a few bucks off you even though they were perfectly fine then "What do you mean officer? I don't sell meat"

Seriously though, on prices you could charge %7 or so but you have to take into account the curing time, the supplies and the most important factor is your own valuable time it takes to smoke the thing, around here pastrami also costs around $10lb in the stores and sucks compared to homemade so I would do them for $9lb at least.
 
As long as it's no checks or CCs there is no proof that you sold anything. Cash sales only.
 
If a person is inclined to sue someone and gets a lawyer, they will have the proof they need before you ever know you are being sued. Most lawyers that do those type actions are well aware of all the tricks and excuses defendants use...

I kind of thought 7.00 was a little too cheap myself.
I know it is just above break even but Im not trying to retire selling deli meat and sausage. at least not yet!
