Well any ways the Corned Beef was $1.77 a pound,so I picked up 4 knowing 1 would become Pastrami.

Soaked for 2 days changing water

Going to use my WSM 18.5 so I have a SS pan with a rack

Rubbed down while getting the smoker ready

No picks of the smoker set up,using my new BBQ Guru

TBS I am not sure if you can see it,this pic was 45 min. into the cook

after 8 hrs. smoke I brought it in to finish in the oven Foiled and cooked to 200* F- IT

Refridge after it cooled for the next days dinner

This was cold sliced for sandwiches

Sliced as thin as I could

A nice dill pickle to go with it

Sandwiches with some Swiss cheese

Pastrami is  easy to make in any smoker Thanks for looking

Al The Guru is great set it and forget it,from the amount of RO I had in there, I could have left the meat to probably finish. It is the only way to do a long smoke. Thanks for the point I appreciate it

Ever try some pepperoncini's instead of the pickles? Just a little heat and still the vinegar...

Yum!!!

I see you joined the ranks of the "set it and forget it" crowd.

How do you like the Guru?
