Hi All from the Allegheny forest... have smoked on and off most of my life... (53yrs) mostly game,everything from coon to venison...  not a fan of smoking store bought meat. Just feel better when I can catch, clean and butcher myself. 

My favorites to smoke are carp, trout, northerns and whole birds, esp. turkey.

I do a mean pork butt for when we have folks over as the wife doesn't like serving game to company.

I use a modified  ProSeries grill for my hotsmoke, and have used a number of small consumer units to coldsmoke(little cheif, ect.) Recently I fried the element on my last one so I thought I would look online for plans for a homemade charcoal or wood smoker as i would like to move off the "grid".  That is how I found the site.  Looks to be a fair number of folks who actually know what they are doing.(not alot of that on the internet).
