overnight smoke almost went bad!

    so i crank up the smoker (WSM) yesterday at around 6pm with almost a full 18lb bag of charcoal. it is up to temp and temp controller is holding it at 260 with water in the pan. so i add the two 9ish lb pork butts to it and set the controller to 230 at just after 7 pm. all seems well i check on it here and there till about 12:30 am everything looks great but i needed to add a little water. so i go to sleep and set the alarm for 7 am to check on it and add water and fuel. when i go outside the fire had died down to a few coals and the temp was down to 170 something. i am still amazed by how much fuel the WSM devours! 

    i cleaned out some ash added coal and water and let her come back up. my meat dropped about 5 degrees during the warming up proccess. one butt was at 169 and the other at 161 when i got outside and now waiting for them to start climbing again. 

    ohh well i am just going to have to make sure this somebish is fully loaded and ash cleaned out before bed next time.

    And that is why I like my propane. Lol. Sounds like you've got it all under controll

If you get rid of the water you won't burn so much fuel.  I have a clay saucer, some use sand, others nothing at all.  The water takes energy to heat it.  Without the water, the energy is used to heat the air.  Once you're up to temp, you'll use less energy to maintain your heat therefore burn less fuel.

    No water for sure.. Same as above go saucer or go nothing at all between the food and charcoal.

    we seem to have rebounded just fine. thank god pork is forgiving. both butts sitting at 178 right now so my target of pulling them off at noon may be reached.

    It's too bad the wsm even comes with a water pan when it's not necessary. Glad your cook is saved.

    That hour of cook time I lost was hard on my cook I was only able to get them to 195 and 1 hour rest. But I will be on time with food in hand so all is well!

    Do you have a Charcoal basket[​IMG]They do a great job of control... and YES , lose the H2O.

    They do great without it...
