After lurking here for a few months, it's time to say a formal hello to the community.
After ruining yet another set of St. Louis ribs, I decided to get serious about smoking and fate led me to this wonderful site. I did a bunch of research here and elsewhere and decided that a MES 40" fit well with my lifestyle and experience level. I also decided that Todd's AMNPS was the way to go.
My wife and I are both good amateur chefs and so she agreed that we needed the proper equipment to make the smoked dishes we love and with Christmas right around the corner orders were placed and BIG boxes arrived.
Naturally I couldn't wait so I'm off to races! I did three racks of baby backs two weeks ago (2-2-1 method) which turned out fantastic (the free five day course is excellent) and right now have my first brisket working for tonight's dinner.
From advice on thermos (Maverick here), to rubs, marinades, etc, this place is an awesome resource.
A little about me: I'm a systems engineer in Northern Virginia with a passion for good food, fly fishing and cycling. I have two rib-loving daughters and a dog who worships me for controlling smoke and meat.
I look forward to reading and contributing where I'm able and once I get my legs under me a bit with this smoking thing, Q View, baby! Cheers.
