Out of meat sticks.

So it took 6 days for these to be done.

Decased and tested. Perfect wrinkled semi dry sticks. Exactly how I wanted them.





Had a little bit of fat out but not bad. Hard to hang sticks and not have it happen. I also made these very long. If they were shorter, it woildnt have been a issue
 
Nice looking texture and I really like the wrinkled look too!

How did you allow them to dry a bit?
Just hung in the fridge since Monday morning.

Maybe I should have hung in my chamber.  Maybe next batch.

sprinkle in a little crushed red pepper to clear the nostrils. Looks great. I gonna venture into some small breakfast links tomorrow.

I never thought about de-casing and drying. Sounds interesting.

I only have one pack of stix in the freezer! I may be trying this sooner than I thought!!

Its really good.

I dried then decased.
