We was out and I made some wife and kid friendly.

A.C. Leggs #116. Added cure .. all beef

Mixed and in the fridge for 48 hours. I find like cured meats the long cure time for sausage makes a big difference..



Stuffed in 20mm collegen casings. Collegen is so easy to work with, plus I forgot go get my sheep casings soaking.



Yea, not a good stuffing job, I had to do it all myself. Stuffer isn't even clamped down but I got it done.

Used cob pellets in the expandable time. Pulled at 152.





Then I hung on my bacon hanger the rest of the night.



Then in the fridge, more pics tomorrow.

I don't see much wrong with the stuffing at all. You got some nice color going on there as well

Looks great to me!!!  I'm a huge fan of the Legg #116 mix.  I usually kick it up with a little jalapeno powder and ECA for that classic stick twang.  So far that is my favorite recipe (but I have not opened my Owens chipotle wildfire mix yet, but it's coming).

Its a very good universal seasoning.    I usually kick mine up some too.
 
Good looking sticks Adam! I just ran out of mine. I used that same AC Legg Old Plantation #116 and that was pretty good. I do also agree with Dave. I would add some jalapeno or cayenne the next time I make it. I can see even the citric acid would give it another kick.

I usually add peppers, never messed with additives like citric acid.
 
I have wanted to do deer sticks but never have. I mostly do pressed jerky. Looking how great yours look I may just have to try it next time.
