Decided to smoke a BIG meat loaf and some dutch's wicked beans today .
5 lbs 85 / 15 ground chuck.
2 lg. videllia onions , Diced
6 stalks celery , diced
1 bell pepper ,diced
2 jalapenos , seeded and diced
1/4 cup my home made seasoning
4 eggs
2 cups plain bread crumbs.
1 lg tomato sliced thin, to top meat loaf in last 30 min of smoke.
Only changes i made to dutch's recipe was , i left out pineapple and doubled the mustard powder and added 1 cup molasses. Also added 2 lbs of chopped smoked chuckie to the beans
i do a double batch 110 oz beans and double everything else.
also i'll throw a rack on top of the pan and throw a couple of links of hot sausage cut into 1/4s on the rack to smoke and let the drippings season the beans.
Eating good in the neighborhood tonight.

The oops was because i was supposed to do this last weekend.
no pics as someone stiole my digi cam off the dash board of my truck .
On the job , took some pics and set it on the dash went in to grab my tools . (maybe 5 min) came out and it was gone.

SOB's, they stole tools right outa the back a our work truck bout two weeks ago. Feller needs ta carry a gun from now on I guess.

Now that sounds like a nice meatloaf and the beans are always good. I know somebody whos gonna be eating good tonight
