Onion Rings?

Ok people who's got the best onion ring recipe? I love the things, but really don't have a good batter recipe for them, only the store bought stuff...and yes it needs to be deep fried and if ya smoke them it would only be a plus.

Not homemade, but I use Louisiana Shrimp Fry for everything battered. Use beer instead of water during step one of the directions..

Just mix a little bit of batter with some beer. Drip (insert fried food here) into beer batter, then drop into dry batter.

Fry 'em if ya got 'em.

edited to add that Michelob Amber seems to be the best beer to use for this recipe
 
I will look and find-but mine is the real thing-off top of my head is flour-baking powder salt seperated eggs-mix in the yolks and beat the whites and fold in-killer rings milk must be in there too-family been making over 100 years-if u want a waffle recipi ask-
 
thanks guys, let me expand on this some , anything ya do to the rings before battering like drying them, salt them, soak them.?
( I have to admit I was watchin the food channel and they had a diner on that had a mountain size order of rings that made my mouth water.)

And if you're offeren the recipe desert i'd be interested.

I thought I just did?proportions-depends how many u making-ingreadients there u play-2 cups flour(sifted) 1/2 tsp baking powder-salt to taste-touch of sugar-than the egg thing-and milk to make batter-and do eggs in order

So do you use this waffle mix to coat the onions in before deep fat frying?
If not my bad, but it does sound like a good "puffy" batter for onion rings.....
 
Heres a beer batter for you. It's simple but very good.

2c. all purpose flour
2t. salt
2t. pepper
2c. beer of choice
Mix ingredients together and dip onion rings. Let excess batter drip off before frying.

Here is a really light good tasting beer batter for onion rings and shrimp
on the onion rings and shrimp ice water is good then make sure you pat them off so the batter sticks
ingredients can be multiplied to make whatever amount you need

1/3 C Flour
1/3 C corn starch
TB canola oil
1 egg
about a 1/2 to 3/4 C flat Beer
1/2 tsp garlic powder
cayane pepper to taste. I like about 1/2 tsp also
make it the consitstancy of thin pancake batter
put in the fridge for about an hour before use
 
my mix is
40 oz beer
1 gallon milk
salt and pepper to taste

mixed in a wash tub

soak onions in mixture 20 minutes
move wet onions into white flour cover completely
quick dunk back in the mixture and then into course ground corn meal cover completely

for a finer texture you can try fine and medium ground corn meal

same recipe for green pepper rings but I mix a little cayanne in the corn meal

In my opinion the secret to success is taking the time on the prep so you don't get them big lumps of onions together that never cook right.
