Onion, Cucumber & Tomato Salad "Kicked up a couple of Notches"

For those of you who like Onion, Cucumber and Tomato salad here is what we do that really kicks it up

 Use what ever ratios you like

We use about 3 cups Apple Cider Vinegar 

1 cup water

1/2 to 1 cups sugar

Salt and Pepper

Cucumbers, Onions and Tomato's  Sliced the way you like them.

We also add Banana peppers sliced sometimes Jalapenos (Seeded and membrane removed)

Then we started adding carrots and sliced Apples  The Apples are probably my Favorite

The combination of sweet and sour  Wow.

Apple souds like a nice addition.  We put in some avocado and EVOO down here.

I have always used the vinegar, sugar,s&p. Sometimes, when I have it I will slice some cabbage hearts. When I can't think of anything else, tomato, onion and cucumber is always a good go-to. Joe

Such a simple summer salad and so delicious! I eat cucumber and tomato salad almost daily for lunch!!

Cucumbers, tomato, S&P, Vinegar, EVOO...that's all that's needed. Once in awhile, if I'm low on cucumber and tomatoes, I'll add some chick peas to the salad to give it a little extra body and to give myself a bigger portion.
 
my wife wouldn't let me eat something like that without feta cheese. we also use basil infused red wine vinegar a lot on tomato/onion/cucumber/feta salads.

caution: if you use feta, most of the time you dont' want to add any more salt. however, sometimes you/they have soaked feta in water to pull out a lot of the salty brininess, so then you still can if you want. usually we just add pepper, not salt.
