Been on this site a little over a year, use your ideas often but haven't submitted a roll call yet. I smoked years ago & recently started up again. Home fabricated smoker from a 1947 GE refrigerator, propane main heat with electric hot plate smoke generator plumbed in from the side (cold smoke option). I have been known to think of new ideas & would love to hear back on my latest mad scientist project. Have heard of vacuum brining and am going to turn a goodwill pressure cooker into a pork butt vacuum chamber evacuated via my food saver. Anyone think this will work? Tell me your thoughts, thanks
