OK FOLKS I GUESS YOU CAN SAY I AM A PROFESIONAL BBQ SELLER , STARTED AS A HOBBY AND NOW SMOKING FULL TIME, HAVE A 30 FOOT ENCLOSED COOK SHACK TRAILER AND A 500 GAL WOOD FIRED SMOKER ON A SEPERATE TRAILER ALL THAT I BUILD MYSELF. COUPLE OF PROBLEMS I HAVE EXPERENCED IS TWO TRAILERS = TWO TRUCKS OR TWO TRIPS TO GET WHERE EVER I MAY BE BOOKED, SECOND PROBLEM MY SET UP IS WELL OVER 40' AND MOST OF THE VENUES I DO ARE AVERAGE $300 TO $600 PER 10 X 10 SPOT SO I CAN EASY DUMP $2000 BEFORE I SERVE MY FIRST RIB, THIRD PROBLEM I USED A TOY HAULER TYPE TRAILER 14" TIRES AND I AM ABIT ON THE HEAVY SIDE AND I AM BURNING TRU TIRES SO WHATS A GUY TO DO? WELL YOU JAM IT ALL ON A BETTER SMALLER TRAILER AND OH YEAH YOU ONLY HAVE 7 DAYS TO DO IT BEFORE YOU GOTTA GET TO THE NEXT EVENT! I STARTED LAST TUESDAY AND TODAY IS SATURDAY HERE ARE MY PICTURES SO FAR
having a colorado 20 minute rain delay so I'll post some more pic's from today so far, as far as the co health dept, I really should not have any problems, I will have my four compartment sink, 2 commercial refrigeration units, holding cabinet, freezer, char broiler. the only thing I am going to try and get away with is my hood due to the open air design I should be able to get away without it if I need it I'll put mine in
I am at day 6 and I will have to take her for her first test drive, 140 mile should do it. wish me luck I just hope it tracks like before I put a few ton on it, still have a little bit to do on her in the morning. gas to fryers, bare min. on some electrical than load up some applewood and will hopefully will be putting in about 500lbs on SMOKE by this time tomorrow. Be back in a week! have a boat load of pic's but I am about to use my system to start a fire:)
Dang Wolf, that a mighty fine build you have going. You do realize that you'll be bombarded with all kinds of "how to" questions from those folks how want to get into the event catering business? Now as for meownself, I would mind a peek inside your trailer unit!!
SOLD OUT! Spent a week with the SCA this is a group of fine folk that reanact 1600 battles with armor and all, didn't get a chance to see any of that.tho had a great time but worked my ass off. weather was ok until nite when the cold of the mountains inverts to wind so a couple of nites the wind was so bad it was like the big bad wolf did blow the houses down. But not the big bad wolfs house because it is made of STEEL! the build was a great success but found out I have a bent axel so those crappy dexter moble home axels will be going to the scrap yard. here are some pic's for you all the enjoy, will be fine tuning the trailer with sinks, and electric this week and putting a char broiler on too again over all I am very happy so far with it. Tune in.
Well that's a big un alright but is it gonna fit under the over passes, bridges and though the tunnels? It looks like it might be a might too tall for the roads.
I am just under 12' only issue so far low hanging trees in remote places where there hasent already been a truck or two tru it already thats where the chain saw comes in handy just hope it not a pine tree!
