Have an old smokey electric that I love to use, but I'm thinking about adding an adjustable vent on the top opposite the thermometer and cutting a door down at the bottom to add chips when needed. I'm thinking that putting these in would allow for less steam for slower cooking. I may need to use an old t shirt to block smoke from escaping while letting steam out. I'd like to smoke my briskets longer without them getting over done. Anyone done this? When I do it, I'll try to take pics of the mods.
