Hi,

My Name is Mark and I live in the Bethlehem PA area, grew up Southern, but well shit happens.... You cant get anything except Kennel-Q up here so gotta do it myself.

Been a long time smoker starting out a long time ago with a cast iron smoke box in a gas grill...  That turned into a MEECO electric Water Smoker that served for about 15 years.  But frankly wasn't getting the results I desired, and was tired of buying electric elements every 18 months or so.

I decided to up my game a bit, and this years tax check bought a Smokin it Model 2, and a good commercial vacuum sealer.....

Last Years check bought a good meat grinder from Cabela's and we grind all our own burger now with Costco meat..  Didn't want to feed the kids "pink slime" and wanted to know what I was eating as well.  Also have done some sausage with it with mixed results...

I would say that I am a quasi prepper, and the vacuum sealer gets used for lots of other stuff as well and replaces a  low end foodsaver that just didn't cut it.

So now that the gear is up to snuff, I gotta get my smoking game on.... have had nothing but great results in the smoker so far, ran some trout, a Pastrami, and got some steelhead (from BJs) running as I type.  I have only had it a week....

I usually google before I post, and as everyone is aware, there are probably more opinions on what is right and wrong about smoking as their is about politics...

Would appreciate folks stopping by my first post in the Jerky forum and adding their two cents....

Welcome to the forum ! Congrats on the new smoker, I've seen those and look real nice ! I think there's even a group here that the Smoke-it owners have created...Post some pics up here of that steelhead.... Love smoked fish ! Thumbs Up
