I think when I re-joined after Password stuff up sometime ago my preferred addy,  Spud was  not available.

Next best thing was as above - in my world potatoes are spuds they have eyes, love them as well as sausage and anything to do with curing, smoking, eating anything that had more than one leg, swam or fly's. that's the story.

As I said I'm from Australia, Perth, Western Australia to be exact.

Have been making eatable meat products for quite a few years, decided that I needed to up my game and start doing things better and being a bit more adventurous.

At present (today) I'm in Brasil for work and have a few hrs. to kill each day so have cleaning up my "research sites and forums".

Hence I have "stepped out" of the shadows here. 

I have been getting Jeff's News Letter for about 2 yrs. now and enjoy reading them immensely, have used some but not enough of his ideas and recipes.

I'm a bit of a tinker with DIY and am in process of converting 6ft Chest Freezer into a Stand-Up Smoker, this is WIP

Do have I think its a "11kg" vertical stuffer, a good grinder. common BBQ Grill, Venturi Cold Smoking rig. vacuum packer.

So am pretty well set, just need time at home and some reasonable priced meats.

Between us we have huge appetites for Beer, Sausage , Bacon, smoked products - U name it, so I guess we fit into your Guys Category pretty much.

Other than my shoe size that's me,  Oh!! am a young 62 years  Grandad.

I'm looking through all manner of Articles and yep there is some very helpful stuff here.

One that really strikes me is the Kirby Mixer.. Now that is what I call innovative.
