Do you guys use water pans and if so where do you place them and are there any benefits
That's a personal choice , I use no water and cook on a stickburner .
I feel that is closer to braising meat . I can do that in my oven... check my embedded shots in my profile.

I have a chargriller outlaw. It's similar to OKJ. I don't use water pan. Not saying it's wrong, just never found it necessary.
