Ok, I've got a question about fridge builds.

    I think I already know the answer, but...

    Has anyone, or is it possible to leave the fridge intact as far as being able to cool the chamber?
    I would like to pipe the smoke in using a amnts, and use the compressor to keep the chamber at 40* or slightly lower for cold smoking bacon. I realize it will run quite a bit, am I nuts?

    It would work for a while, but in time the smoke residue would cover the fins of the evaporator coil and probably cause the refrigeration unit to not work.

    Also most fridges have a blow in insulation that is not user friendly for smoking temps.  It would need to be pulled and replaced with something like rockwool for a smoker (unless only used for smokes of sausage, cheese, fish and snack sticks at lower temps below 200*)

    That was my thoughts also. Curious if anyone has tried it.

    This would strictly be for cold smoking. I cold smoke my bacons for 24-36 hrs over several days and try my best to keep the chamber temps below 40*, but mother nature is a PITA sometimes.

    I sometimes use a retired milk cooler for cold-cold smoking.  All stainless walls, no coils to worry about or open seams.

    Mr T has it! Along the same line.......a small chest freezer would do the same. No coils or fan system. Might have to change the thermostat or recalibrate it.
