Looks like a great forum. Just got my 1st smoker. MES (been lurking) Made the best ribs I've ever attempted w/o smoke. Made a deer loaf the next night AWESOME.

can't wait to do jerky and salmon this weekend.

need to learn to fill it up with stuff when you run it... not that that should be a problem...
 
W/O SMOKE. You'r not SMOKING your cooking slow. I have a MES and the little box under the water pan is where you put your chips.

Yea I know you know this but I had to pick.

OH I SMOKED those ribs w/ apple wood. I just meant the 1st I ever made ribsin a smoker... All other methods that DO NOT involve smoke are crap. I've tried. LOL Oven or just grilled don't cut it.

No takin your fish from up North either Capt Dan...SIL = Southern Illinois, and I'm always outdoors! Run a forum about that too.

I have a guy in AK that I trade him dried morels for a box of fresh salmon each year. IT IS A GREAT DEAL!!!

Took out a deer roast this am for the wkend smoke session.

BEEN THERE!!! They have a place out at the World Shooting Complex too and another in Fairview Heights where the Super Smokers used to be.
